Sesame Beef and Asparagus Stir Fry

INGREDIENTS
SERVINGS 4UNITS
• 1⁄4cup reduced sodium soy sauce
• 3tablespoons rice wine vinegar
• 2tablespoons hoisin sauce
• 2tablespoons brown sugar
• 1tablespoon chopped gingerroot
• 2teaspoons sesame oil
• 2teaspoons cornstarch
• 1⁄4-1⁄2teaspoon red pepper flakes
• 2cups water
• 2(3 ounce) beef-flavor ramen noodles (plus seasoning packet)
• 4scallions, sliced
• 1teaspoon sesame oil
• 2tablespoons oil (divided)
• 1lb boneless sirloin, thinly sliced across grain
• 4garlic cloves, minced
• 1lb asparagus, thinly sliced diagonally
• toasted sesame seeds
• green onion (to garnish)
DIRECTIONS
1. In a bowl mix together, soy,rice vinegar, hoisin sauce, brown sugar, chopped ginger, 2 tsps. Sesame oil cornstarch and pepper flakes, set aside.
2. To 2 cups boiling water and two beef ramen noodles, 1 seasoning packet, 4 scallions and 1 teaspoons sesame oil. Cook one minute, remove from heat; let stand covered.
3. In a large skillet heat oil, add boneless sirloin and garlic and stir fry until lightly browned. Remove beef, keep warm. Add second Tbls. of oil add asparagus; stir fry until done to your taste.
4. Add beef and soy mixture to skillet. Stir fry until thickened. Sprinkle with toasted sesame seed and more green onions. Toss with noodles and serve.
