Lamb and Vegetable Stew (Comfort Food)
Ingredients:
- 1 lb lamb shoulder, cubed
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup peas
- 1 tbsp tomato paste
- 3 cups beef broth
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
- Brown lamb in olive oil in a large pot. Remove and set aside.
- Sauté onion and garlic until fragrant. Stir in tomato paste.
- Return lamb, add carrots, potatoes, thyme, and broth.
- Simmer for 1.5 hours or until lamb is tender.
- Stir in peas, cook 10 more minutes. Season to taste and serve.
