SWEET AND SOUR CABBAGE SOUP

Since it’s the rainy season here’s something that’s simple to make and cost effective to keep you warm and feeling content.

Ingredients -

1 tablespoon vegetable oil

1 onion, finely chopped

2 carrots, peeled and sliced

2 cloves garlic, minced

1 small head of cabbage, shredded

1 can (14 ounces) diced tomatoes

6 cups vegetable or chicken broth

1/4 cup tomato paste

1/4 cup apple cider vinegar

2 tablespoons brown sugar

1 teaspoon caraway seeds

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions -

 

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sliced carrots and sauté until the vegetables are softened, about 5 minutes.

 

  1. Add the minced garlic and shredded cabbage to the pot. Continue to sauté for another 5 minutes or until the cabbage is wilted.

 

  1. Pour in the diced tomatoes and their juice, followed by the vegetable or chicken broth.

 

  1. Stir in the tomato paste, apple cider vinegar, brown sugar, and caraway seeds. Bring the soup to a simmer.

 

  1. Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the vegetables are tender.

 

  1. Season the soup with salt and pepper to taste. Adjust the sweetness and sourness by adding more sugar or vinegar if needed.

 

  1. Ladle the soup into bowls and garnish with chopped fresh parsley if desired.
