Ingredients -
1 tablespoon vegetable oil
1 onion, finely chopped
2 carrots, peeled and sliced
2 cloves garlic, minced
1 small head of cabbage, shredded
1 can (14 ounces) diced tomatoes
6 cups vegetable or chicken broth
1/4 cup tomato paste
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 teaspoon caraway seeds
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions -
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sliced carrots and sauté until the vegetables are softened, about 5 minutes.
- Add the minced garlic and shredded cabbage to the pot. Continue to sauté for another 5 minutes or until the cabbage is wilted.
- Pour in the diced tomatoes and their juice, followed by the vegetable or chicken broth.
- Stir in the tomato paste, apple cider vinegar, brown sugar, and caraway seeds. Bring the soup to a simmer.
- Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste. Adjust the sweetness and sourness by adding more sugar or vinegar if needed.
- Ladle the soup into bowls and garnish with chopped fresh parsley if desired.
