Ingredients:

 

For the Shortbread

 

1 cup (2 sticks) unsalted butter, softened

1/2 cup granulated sugar

2 cups all-purpose flour

For the Caramel:

 

1 can (14 ounces) sweetened condensed milk

1/2 cup unsalted butter

1/2 cup light brown sugar

1 teaspoon vanilla extract

For the Chocolate Topping:

 

1 cup semi-sweet chocolate chips

1 tablespoon unsalted butter

Instructions:

 

To Prepare the Shortbread Base

 

1. Preheat your oven to 350°F (175°C).

Line a 9x9-inch square baking pan with parchment paper, leaving an overhang for easy removal.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Gradually add the flour and mix until a crumbly dough forms.

Press the dough evenly into the bottom of the prepared baking pan.

Bake in the preheated oven for about 20-25 minutes, or until the edges are lightly golden. Let it cool while you prepare the caramel.

 

2. Make the Caramel Layer

In a saucepan over medium heat, melt the butter, brown sugar, and sweetened condensed milk together.

Stir constantly until the mixture comes to a boil.

Reduce the heat to low and continue to cook, stirring constantly, for about 5-7 minutes, or until the mixture thickens and turns a caramel color.

Remove the saucepan from the heat and stir in the vanilla extract.

Pour the caramel over the cooled shortbread layer, spreading it evenly.

 

3. Add the Chocolate Topping

 

In a microwave-safe bowl or using a double boiler, melt the chocolate chips and butter together until smooth.

Pour the melted chocolate over the caramel layer, spreading it to cover the entire surface.

Chill and Set:

 

Place the baking pan in the refrigerator for at least 2 hours, or until the chocolate has set completely.

Cut and Serve:

 

Once the chocolate is firm, use the parchment paper overhang to lift the entire slab out of the pan.

Place it on a cutting board and use a sharp knife to cut the millionaire's shortbread into squares or bars of your desired size.
